A QUARTER CENTURY OF DIVINE FLAVOR is a GREAT RUN and EDEN ALLEY CAFE IS NOW CLOSED but our recipes can still bring our dynamic flavors to your tongue!

Feeding hungry people since 1994, Eden Alley was a cornerstone of the Kansas City dining experience offering vegetarian, vegan, and health-conscious meals to hundreds each day.

We have donated our restaurants' equipment to local charities to ensure the mission to feed the hungry continues.

PLANT-BASED FOODS

Eating a plant-based diet means eating a diet that is based on an abundance of fruits, vegetables, whole grains, beans, nuts, and seeds. You don’t have to be vegan or vegetarian to enjoy the health benefits of a plant based diet. It is well known that the populations across the globe who eat this way live longer and enjoy better health than populations whose diets are centered around meat and dairy.


Plant-based foods are colorful. When it comes to good health, color is key! The menu at Eden Alley and the recipes in this cookbook feature the most vibrant array of colorful ingredients, making each meal a feast for the eyes. Color indicates the presence of phytonutrients, healing plant chemicals that help to control our weight and prevent chronic disease. All plant-based foods contain beneficial phytonutrients. This is the most important reason that the American Institute for Cancer Research promotes eating a predominantly plant-based diet to reduce the risk of cancer.


Plant-based foods are also low in calories, saturated fats and cholesterol, and high in fiber. These traits make them excellent for protecting against heart disease, stabilizing blood sugar levels, and helping support weight loss.

The more we learn about nutrition, the more we are beginning to realize the importance of returning to a whole foods diet—the way people ate a hundred years ago. A whole food is a food that is as close to its natural state as possible. Whole foods are minimally processed, real foods with no artificial colors, flavors, or preservatives. They are not tainted with refined carbohydrates like high-fructose corn syrup or harmful, plastic fats like hydrogenated oils. Our bodies truly recognize them and know how to break them down.


Poor quality, processed and refined foods are deficient in many key nutrients. When we eat poor quality processed foods, our bodies intuitively sense that we are not getting what we need, and in an effort towards survival we end up eating more. This can lead to unwanted weight gain and poor health. Whole foods are high quality, nutrient dense foods that are better equipped to provide the body with what it truly needs.


At Eden Alley, nearly everything in our kitchen was made from scratch featuring the freshest whole foods ingredients. Fresh, whole foods are so flavorful that simple preparation is often enough to make them tasty and enjoyable.
